Parish Cole Slaw

JANICE’S “ORIENTAL” COLE SLAW Salad: Dressing: Shredded head of cabbage, or ½ cup of white sugar 1 ½ lg. bag of shredded cabbage ½ cup oil Small bunch green onions, chopped ¼ cup white vinegar ½ stick butter 1 Tbsp. soy sauce 2 bags Ramen noodles (noodles only) 1 tsp. sesame seed oil ½ cup sunflower seeds ½ cup nuts (I use cashews) Melt the ½ stick butter in a pan over low to medium heat. Add the Ramen noodles (I broke them up into smaller pieces first) and fry, stirring often, till they start to turn golden brown. Add the sunflower seeds and the nuts. Continue frying till all the noodles are golden brown. Pretty easy to burn this towards the end, so keep stirring frequently. Mix this with the cabbage and onions. Add all the dressing ingredients to a blender, and mix. If the mixture is too thick, thin by adding additional oil. The dressing can be made in advance. Just set it aside and toss with the salad mixture shortly before serving (maybe up to an hour before). Passed along for your enjoyment by fellow Pope John XXIII parishioner Steve Lukezich
